The Challenge

In modern breweries, yeast is dosed as a liquid suspension—and is extremely sensitive to mechanical stress. Conventional conveying and dosing systems generate shear forces that measurably reduce the viability and vitality of the yeast. The consequences are an increased proportion of dead cells, unstable fermentation, quality deviations, and sensory defects in the finished beer. Even with optimal wort, this can cause the entire brew to fail both economically and in terms of quality.

The sera Solution

For gentle dosing of the yeast suspension, sera relies on peristaltic pumps with a slow, uniform delivery principle. The low speed range reduces shear forces to a minimum. The valve-free design avoids additional mechanical stress caused by cross-sectional constrictions. All components in contact with the medium are made of food-grade materials in accordance with EC 1935/2004 and FDA regulations. The pumps can be easily integrated into existing processes (e.g., via Tri-Clamp or dairy tube fittings), are easy to clean, and are suitable for CIP temperatures up to 80 °C. Hose changes can be performed quickly, minimizing downtime.

Customer Benefits

  • Gentle handling of the yeast while maintaining consistently high viability
  • More stable fermentation processes and reproducible beer quality
  • Reduced risk of off-flavors and fermentation problems
  • Low-maintenance operation with minimal downtime

Summary

This example shows that it is not the wort that determines fermentation quality, but rather how the yeast is handled—and this is precisely where dosing technology becomes a quality-critical process step.
